German Apple Pancakes (Apfel Pfankuchen)

3-4                   -                       apples (pealed and sliced)

2          -           tablespoons     butter

-           1/4       cup                  brown sugar

-           1/4       teaspoon          cinnamon

-           1/4       cup                  Raisins

-           1/4       cup                  Roasted Almonds (coarsely chopped)

4          -           -                        eggs

-           3/4       cups                 milk

-           3/4       cups                 flour

-           -          -                        salt - to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Peal and slice apples.
  3. In a skillet, melt butter.
  4. Sauté apples in butter for 2 minutes.
  5. Add apples, brown sugar, cinnamon, raisins, and almonds. Heat until brown sugar forms a glaze. Do not overcook apples.
  6. Set skillet mixture aside.
  7. In a mixing bowl add flour, milk, and salt. Using a rotary beater or wire whisk, beat until well blended. Do no overbeat!
  8. Add eggs one at a time. Beat just until completely blended after the addition of each egg.
  9. Pour batter over the glazed apple/raisin/almond mixture.
  10. Bake at 400 degrees for 30 minutes

Background
